Chimayo absolutely knocked it out of the park. The ambience is incredible — it’s been around for a while, but the vibes are still completely on point. It’s cozy, warm, and inviting. Surprisingly, it’s two floors and much larger than you’d expect, yet it never feels crowded. The food is next level. We started with the queso fundido — you truly can’t go wrong with hot, fondue-style cheese and chips served right at the table. It set the tone perfectly. For my entrée, I had the ribs, and the presentation alone was out of control. They wrap them together, stuff them with mashed potatoes, and top everything with crispy onion rings — it’s insane. The tenderness and flavor were honestly some of the best I’ve ever had. For dessert, the manager recommended the churros, and they did not disappoint. Chocolate fondue with fruit, cookies, and churros for dipping — super good and the perfect way to end the meal. Service was excellent all around. Jared and the manager were on top of everything — clearing plates, making great recommendations, and making sure we had an amazing experience. Had such a great time and can’t wait to go back.
Hands down, one of the top 3 best meals of my life! We were lucky enough to snag reservations two nights in a row and let me just tell you...do not pass up eating at this Park City institution upon your visit! If you can, request Kat or Matt as your server because they're just fantastic people! It's hard to find the marriage of service and high quality culinary delight these days, and Chimayo delivered!
Found a new favorite restaurant in Park City! It was decently rated on google. We were able to get a seat immediately on a Thursday night. Very cool design in the restaurant. We were brought a potato focaccia bread with a dipping sauce that was unbelievable. Great blend of flavors. For appetizers we got the ceviche and the 'nachos'. Wow. The flavor profile of each appetizer was fantastic. I prefer the ceviche and will get that again. For entree's we got the avocado salad and the chicken relleno with mole. Super impressed with every part of our meal. Service was great and we were checked on enough to feel well taken care of. Glad to have found a great mexican restaurant that has such a delicious culinary style. Updated 2026: We came back to try Chimayo again. I'm extremely happy to say that the food was just as amazing. We got the ceviche again and it was great again. We got a trio sampler as well which also had amazing flavor. We tried different entree's this time. We got the filet and lobster tail and the shrimp with avocado and rice dishes. Once again, spectacular. They pair the mains and sides to perfection. And the display and presentation is top notch. We definitely have found a favorite restaurant in Utah.
5 stars from the food to service! Our server was a young guy from New York, I forgot his name but he was superb. The food was excellent. My mom who is the biggest food critic I’ve ever met said the Lux Margarita, Queso fundido, and the molé on the chicken dish was the best she’s ever had and that’s a lot coming from her!
We had a wonderful dinner at Chimayo! The meal started with their complimentary focaccia bread served with a flavorful cilantro cream—such a nice surprise. The duck enchiladas were rich and perfectly seasoned, and the scallops with a blood orange glaze and pineapple jalapeño reduction were absolutely outstanding. Excellent service and a warm, inviting atmosphere made for a perfect evening. Highly recommend, especially during off-season 2 for 1 loyalty club deal!!
